Everyday Wine in the City - Chimney Rock 2006 Cabernet Sauvignon Tomahawk Vineyard

I've always paired Filipino dinners with white wines, but because of the occasion, we decided to open a very special 2006 Cabernet Sauvignon Tomahawk Vineyard by Chimney Rock.

The pairing was superb! This wine is definitely a special wine and a winner to us.



We went to Chimney Rock in Napa Valley for the first time in September a year ago and this was when we sampled the 2006 Cabernet Sauvignon Tomahawk Vineyard for the first time.  Under normal circumstances, I wouldn't spend this much on a bottle of wine but we truly liked it so we decided we'll bring it home and open for special occasion. That special occasion was Christmas Eve.


A bottle of wine usually lasts the whole week for three dinners. Guess how long this wine lasted? One night. We truly liked it.

We paired it with a select Filipino dishes like Chicken and pork barbeque, a Filipino noodle dish called pancit, a Filipino meat loaf called embotido, and lumpiang shanghai. These dishes remind me of Christmas back in Manila! What made it extra special was the wine pairing. Super sarap! This wine also tasted better an hour after we opened it.
